I say make that a Red Sparkling Wine.
Why Red? Well that is a very Chinese colour of course.
According to Wikipedia on Red in "Colour in Chinese culture"
Red, corresponding with fire, symbolizes good fortune and joy.
Red is found everywhere during Chinese New Year and other holidays and family gatherings.
A red envelope is a monetary gift which is given in Chinese society during holiday or special occasions. The red colour of the packet symbolizes good luck. Red is strictly forbidden at funerals as it is a traditionally symbolic color of happiness.
In modern China, red remains a very popular color and is affiliated with and used by the Communist government.So that's settled. It has to be red.
OK but it is New Year. We want some fireworks to go with celebrations.
So it has to be sparkling. A Red Sparkling Wine it is then.
And with food maybe a semi-sparkling (i.e. Frizzante) Brachetto D'Aqui so there is less gas to get in the way of the food. And it is Off Dry so it offsets chilli bite between mouthfuls.
Here's my Penang Style Ikan Mein. Great with a Red Semi-Sparkling wine.

Here is another Red Sparkler from Beaujolais. But this is Fully Sparkling (5-6 bars of pressure) not Semi-Sparkling (2.5 bars of pressure).
Note that 3 bars of pressure is 43psi. My car tyres' pressure is 2.3 bar or 34psi on a standard load.
