Roast Chicken Painted with Tandoori Paste and PX

I hadn't roasted a chicken for some months but I wanted to make some chicken soup so I bought a 1.8 kg chicken and roasted a chicken for Sunday lunch yesterday. 


Prior to roasting it I stuffed it with two limes and three large vinegar soaked chillies. 


Then I made a mixture of Tandoori masala, yogurt and Pedro Ximénez (PX) and painted the chicken with the paste and spooned the remnants of the mix inside the chicken.


I set the oven to 190ºC and 90 minutes and let it whirl.


The raisiny PX really did marry well with the Tandoori paste and the limes brought a fresh acidity to the chicken and of course the chillies inside added bite. It worked.

So that was lunch. Roast Chicken painted with Tandoori paste and PX with cucumber slices.


After we were done for lunch, the remainder went into my pressure cooker with onions, carrots, leeks and potatoes and boiling water. Maybe I should have missed out on the potatoes since I am trying to cut down on the carbohydrates.


So I let it whistle away for an hour; opened and gave it a good stir; added some more boiling water; and pressure cooked for another hour.
